Ancient Greeks used to eat meat only at special gatherings like symposium. Igisippos in his cookery book talks about “kandavlos”, the small, greek souvlaki we all know. They used to combine it with pie, cheese, dill and juice! The evolution is a very big souvlaki which is called kontosouvli –meat by pork in big pieces- in order to satisfy all those people who love good food and traditional flavors.
